Honey Mustard Chicken

  • 4 pieces Boneless, skinless Chicken Breasts
  • 1/2 cup Honey
  • 1/4 cup Dijon Mustard
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic, minced
  • Salt & Pepper, to taste
  • 1 tablespoon Fresh Rosemary, chopped
  • 1 tablespoon Lemon juice (optional)

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine honey, Dijon mustard, garlic, olive oil, rosemary, salt, and pepper. Whisk until blended. Add chicken breasts to the bowl, coating generously. Cover and let sit for at least 30 minutes.
  2. Preheat Your Oven: Preheat the oven to 400°F (200°C).
  3. Bake the Chicken: Transfer marinated chicken to a baking dish with excess marinade. Bake for 25-30 minutes, or until golden brown and cooked through.
  4. Make the Sauce: In a small saucepan, simmer remaining marinade over medium heat for about 5 minutes to thicken.
  5. Serve it Up: Plate the chicken, drizzle warm sauce, and sprinkle with fresh rosemary. Pair with roasted veggies or mashed potatoes.
