Honey Mustard Chicken Salad

A refreshing Honey Mustard Chicken Salad that’s perfect for picnics or a light lunch. Packed with flavor and simple ingredients.

  • 2 chicken breasts, cooked and cubed
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup honey mustard dressing
  • Salt and pepper to taste

Instructions

  1. Cook the chicken; season with salt and pepper, and cook on medium heat for about 7–8 minutes per side until fully cooked. Cube once cool.
  2. Prepare the veggies by washing and drying mixed greens; then, dice the cucumber, halve the cherry tomatoes, and slice the red onion.
  3. Mix the dressing in a small bowl, combining honey mustard with salt and pepper.
  4. Combine the cubed chicken with mixed greens, cherry tomatoes, cucumber, and red onion, tossing everything with the honey mustard dressing.
  5. Plate and serve in a bowl or platter, optionally garnished with fresh herbs.
