Honey Mustard Chicken Pasta Salad

  • 2 chicken breasts, grilled and sliced
  • 2 cups cooked pasta (penne, rotini, or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, thinly sliced
  • ½ cup bell pepper, diced
  • ¼ cup fresh parsley, chopped
  • ¼ cup crumbled feta cheese (optional)
  • ½ cup honey mustard dressing (store-bought or homemade)

Instructions

  1. Grill your chicken: Marinate the chicken breasts in honey mustard dressing and grill them on medium heat for about 7-8 minutes on each side or until cooked through. Let rest and slice.
  2. Cook the pasta: Boil salted water and cook the pasta according to package instructions. Drain and rinse under cold water.
  3. Chop the veggies: Dice cucumber, slice cherry tomatoes, and thinly slice the red onion and bell pepper.
  4. Mix it all together: In a large bowl, combine pasta, chicken, veggies, parsley, and feta cheese. Drizzle with dressing and toss until coated.
  5. Chill and serve: Let salad chill for about 30 minutes before serving for best flavor.
