Honey Mustard Chicken Pasta Salad

A delicious and flavorful pasta salad featuring tender chicken, fresh vegetables, and a sweet-savory honey mustard dressing.

Ingredients

  • 2 cups cooked pasta (rotini or farfalle)
  • 1 cup cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add your choice of pasta and cook according to package instructions until al dente (about 8-10 minutes). Drain and toss with olive oil to prevent sticking. Let it cool.
  2. Prepare the Chicken: Season chicken breasts with salt and pepper. Grill or sauté until cooked through (about 6-7 minutes per side). Let rest before dicing.
  3. Chop the Veggies: Slice cherry tomatoes, dice cucumber and bell pepper, and chop red onion. If desired, soak red onion in cold water to mellow the flavor.
  4. Make the Dressing: In a bowl, whisk together honey, Dijon mustard, olive oil, and season with salt and pepper to taste.
  5. Combine It All: In a large bowl, mix cooked pasta, diced chicken, halved cherry tomatoes, cucumber, bell pepper, and red onion. Pour dressing over and mix well.
  6. Chill and Serve: Refrigerate for at least 30 minutes before serving, and enjoy!
