High Protein Loaded Breakfast Burritos

A delicious and hearty breakfast burrito packed with protein from eggs and lean beef, infused with flavorful spices and crispy roasted potatoes.

  • 1 kg Diced Potatoes
  • 1 tsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Italian Herbs Seasoning
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Chilli Powder
  • 1.5 tsp Smoked Paprika
  • 1 Diced Onion
  • 1.5 kg Extra Lean Beef Mince
  • 100 ml Worcestershire Sauce
  • 80 g Tomato Paste
  • 4 Diced Garlic Cloves
  • 15 Eggs (optional)
  • 100 g Blended Cottage Cheese (optional)
  • 10 Large Tortillas
  • 25 g Sriracha Mayonnaise

Instructions

  1. Preheat your oven to 220°C (428°F). Line a baking tray with parchment paper.
  2. Season the potatoes by mixing them with olive oil, salt, Italian herbs, onion powder, garlic powder, chili powder, and smoked paprika.
  3. Roast the seasoned potatoes on the baking tray for 25-30 minutes until golden brown and crispy.
  4. Cook the beef mixture in a skillet with olive oil and diced onion until translucent, then add minced garlic and cook for a minute.
  5. Add extra lean beef mince and cook until browned, then stir in Worcestershire sauce and tomato paste. Let it simmer for 5 minutes.
  6. Whisk the eggs with cottage cheese (if using) and a pinch of salt and pepper.
  7. Scramble the eggs in the skillet until fluffy and cooked through, then combine with the beef mixture and crispy potatoes.
  8. Assemble the burritos by placing the filling in the tortillas, adding sriracha mayo, and rolling them up tightly.

Notes

For extra crispiness, consider toasting the assembled burritos in a skillet before serving.
