High-Protein Crispy Cottage Cheese Flatbread Chicken Wraps

  • 2 large eggs
  • 1/2 cup oat flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 2 medium boneless skinless chicken breasts (about 1 lb)
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1/2 cup Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 cup shredded romaine lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons chopped fresh parsley or cilantro

Instructions

  1. Prepare the chicken: Season the chicken breasts with paprika, cumin, chili powder, and black pepper.
  2. Cook the chicken: Heat a skillet over medium-high heat with olive oil and cook the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  3. Mix the ingredients: In a bowl, combine cottage cheese, eggs, oat flour, garlic powder, baking powder, and salt, mixing until smooth.
  4. Cook the flatbreads: Pour 1/4 cup of mixture in a non-stick skillet over medium heat and cook for 3-4 minutes on each side until golden brown.
  5. Prepare the yogurt sauce: Mix Greek yogurt and lemon juice in a small bowl.
  6. Assemble the wraps: Slice the chicken, layer it on flatbread with yogurt sauce, shredded romaine, cherry tomatoes, red onion, and parsley or cilantro. Roll tightly.
