Sweet Potato Hash Browns

A cozy and healthy twist on classic hash browns made with sweet potatoes for a delicious breakfast treat.

Ingredients

  • 2 large sweet potatoes, grated
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: garlic powder, paprika, or herbs for seasoning

Instructions

  1. Start by peeling and grating the sweet potatoes.
  2. Remove excess moisture by squeezing the grated sweet potatoes in a towel.
  3. Mix the shredded sweet potatoes, chopped onion, olive oil, salt, pepper, and optional seasonings until well coated.
  4. Heat a tablespoon of olive oil in a skillet over medium heat.
  5. Scoop a handful of the mixture into the hot pan and flatten it into a patty.
  6. Cook for about 4-5 minutes on each side until golden brown and crispy.
  7. Drain cooked hash browns on a paper towel-lined plate.
  8. Repeat until all mixture is cooked.
