The Ultimate Healthy Mango Salad

A vibrant and refreshing mango salad that bursts with flavor and is perfect for any meal.

Ingredients

  • 2 ripe Mangos (chopped)
  • 2 Avocados (chopped)
  • 2 Red Capsicum Peppers (chopped)
  • 1 Red Onion (chopped)
  • 1 Cucumber (chopped)
  • 1/2 cup Fresh Coriander (chopped)
  • 1 Lime (juiced)
  • Salt (to taste)
  • 1/4 tsp Red Chilli Flakes
  • A drizzle of Olive Oil

Instructions

  1. Chop your ingredients: Start by grabbing your sharpest knife and cutting board. Chop the mangos, avocados, red capsicum peppers, red onion, and cucumber into bite-sized pieces.
  2. Combine in a bowl: In a large mixing bowl, combine all your chopped ingredients.
  3. Make the dressing: In a small bowl, whisk together the juice of one lime, a sprinkle of salt, and the red chili flakes. Drizzle in olive oil while whisking until you create a silky emulsion.
  4. Dress the salad: Pour your zesty dressing over the salad mix and gently toss everything together.
  5. Add fresh coriander: Just before serving, fold in the fresh coriander.
  6. Taste and adjust: Take a small bite and adjust flavors to your liking.
