Healthy Banana Bread Protein Muffins

Delicious and nutritious banana bread protein muffins, perfect for breakfast or a quick snack.

Ingredients

  • 2 ripe bananas
  • 1 cup protein powder
  • 1 cup oats
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup dark chocolate chips or nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with cooking spray.
  2. Mash the ripe bananas in a large mixing bowl.
  3. Add the almond milk, honey or maple syrup, eggs, and vanilla extract to the mashed bananas; mix well.
  4. Combine the protein powder, oats, baking powder, and cinnamon in another bowl.
  5. Mix the dry ingredients into the wet mixture until just combined.
  6. Fold in the chocolate chips or nuts, if using.
  7. Fill each muffin cup about three-quarters full with the batter.
  8. Bake for about 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Store muffins in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
