Grilled Shrimp Bowl with Avocado, Corn Salsa & Creamy Garlic Sauce

  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper (optional)
  • 1 cup frozen corn, thawed
  • ½ cup red onion, diced
  • ¼ cup cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • Salt to taste
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp cilantro, chopped
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 avocado, sliced or mashed
  • Sesame seeds, for garnish
  • Green onions, chopped, for garnish

Instructions

  1. Prepare Your Shrimp Marinade: In a bowl, combine the shrimp, olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using).
  2. Grill the Shrimp: Preheat your grill to medium-high heat. Place the shrimp on the grill and cook for about 2-3 minutes on each side or until they turn pink and opaque.
  3. Prepare the Corn Salsa: In another bowl, combine the thawed corn, red onion, chopped cilantro, minced jalapeño (if using), lime juice, and salt to taste. Mix well.
  4. Make the Creamy Garlic Sauce: In a small bowl, whisk together mayonnaise, sour cream, cilantro, lemon juice, minced garlic, salt, and black pepper until well combined.
  5. Assemble the Bowl: In your serving bowl, layer the grilled shrimp, corn salsa, and creamy garlic sauce. Garnish with sesame seeds and green onions just before serving.

Notes

You can customize the corn salsa with additional veggies like bell peppers or diced tomatoes for a twist. The creamy garlic sauce can be made in advance and stored in the fridge for a couple of days.
