  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 bunch asparagus, trimmed
  • 1 tablespoon lemon juice
  • 2 cups cooked rice (white or brown)
  • 2 tablespoons chopped fresh parsley, for garnish
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 2 cloves garlic, finely minced
  • 1 tablespoon lemon juice (for sauce)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper, to taste (for sauce)

Instructions

  1. Start by marinating your shrimp in a bowl with olive oil, salt, and pepper. Toss until coated.
  2. Prepare the asparagus by trimming the ends and tossing in olive oil, salt, and pepper.
  3. Preheat your grill or grill pan to medium-high heat.
  4. Grill the marinated shrimp for 2-3 minutes per side until pink.
  5. Toss the asparagus on the grill for 4-5 minutes until tender but crunchy.
  6. Mix together mayo, minced garlic, lemon juice, Dijon, honey, and a pinch of salt and pepper for the sauce.
  7. Plate your dish by adding rice to bowls, layering on asparagus and shrimp, and drizzling with creamy garlic sauce. Garnish with fresh parsley.

Notes

For a spicier kick, add paprika or chili flakes to the shrimp marinade. This dish can also be made ahead of time.
