Sheet Pan BBQ Chicken Nachos

Delicious and loaded BBQ chicken nachos, perfect for easy dinners or gatherings.

Ingredients

  • About 2 cups cooked chicken, shredded or diced
  • 1 cup BBQ sauce
  • 1 bag (about 1012 oz) tortilla chips
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 small red onion, thinly sliced
  • 23 jalapeños, sliced (fresh or pickled)
  • A handful of fresh cilantro, roughly chopped
  • Optional toppings: sour cream, guacamole, or avocado slices

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the chicken and BBQ sauce in a medium bowl until well-coated.
  3. Arrange the tortilla chips in a single layer on a large baking sheet.
  4. Layer the BBQ chicken mixture evenly over the chips.
  5. Add the shredded cheese generously over the chicken and chips.
  6. Slice and scatter the red onion and jalapeños over the top.
  7. Bake for about 10-15 minutes, or until the cheese is bubbly and golden.
  8. Garnish with cilantro and let cool for a minute or two.
  9. Serve immediately with optional toppings.

Notes

For best results, use thicker tortilla chips and keep a balance of toppings to avoid sogginess.
