Cucumber Salad with Creamy Dill Sauce

A refreshing cucumber salad tossed in a creamy dill sauce, perfect for summer picnics and barbecues.

  • 2 large English cucumbers
  • 1 cup sour cream
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Wash your cucumbers thoroughly and slice them into thin rounds—about 1/4 inch thick.
  2. Sprinkle a little salt over the sliced cucumbers and let them sit in a colander for about 10-15 minutes.
  3. In a mixing bowl, combine the sour cream, chopped dill, lemon juice, minced garlic, salt, and black pepper.
  4. Whisk until it’s nice and smooth.
  5. Transfer the cucumbers to a large bowl and pour the creamy dill sauce over them.
  6. Toss gently to coat everything evenly.
  7. Cover the salad with plastic wrap and let it chill in the refrigerator for at least 30 minutes.
  8. Give the salad a final stir before serving and garnish with fresh dill.

Notes

Make the dressing ahead of time for better flavor. This salad is great with grilled chicken or as a light lunch.
