Cucumber Dill Salad

A refreshing and nostalgic cucumber dill salad, perfect for summer meals and gatherings.

Ingredients

  • 2 large cucumbers, sliced
  • 1/4 cup fresh dill, chopped
  • 1/2 cup Greek yogurt or sour cream
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Prep your cucumbers by washing them under cool water and slicing them thin—around 1/4 inch thick.
  2. Chop the fresh dill finely, removing any thick stems.
  3. Mix the dressing in a medium bowl by combining Greek yogurt (or sour cream), lemon juice, salt, and pepper until smooth.
  4. Combine sliced cucumbers and chopped dill in a mixing bowl, then pour the dressing over and mix gently.
  5. Adjust the seasoning to taste with more salt, pepper, or lemon juice.
  6. Chill the salad in the refrigerator for about 30 minutes before serving.

Notes

For added crunch, consider tossing in sliced radishes or bell peppers. This salad can be made ahead of time and actually tastes better the next day.
