Creamy Low Carb Chicken Casserole

A comforting low-carb chicken casserole packed with flavor, perfect for busy weeknights or cozy gatherings.

  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 1 cup broccoli florets
  • 1 cup cheddar cheese, shredded
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the chopped onions in olive oil over medium heat for 3-4 minutes. Add the minced garlic and sauté for another minute.
  3. Add the shredded chicken and broccoli florets to the skillet. Stir and allow the broccoli to get tender.
  4. Pour in the heavy cream and stir to combine. Add Italian seasoning, salt, and pepper, simmer for 3-5 minutes.
  5. Fold in 3/4 of the shredded cheddar cheese.
  6. Transfer the mixture to a greased 9×13 baking dish.
  7. Top with the remaining cheddar cheese.
  8. Bake for 25-30 minutes, until bubbly and golden.
  9. Serve with fresh herbs for garnish.

Notes

Experiment with different vegetables or cheeses for a variety of flavors and textures. This casserole can be frozen for 2-3 months.
