  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the gnocchi by bringing a large pot of salted water to a gentle boil. Add the gnocchi and cook according to the package instructions, usually around 2-3 minutes.
  2. Sauté the garlic in a large skillet with olive oil over medium heat for about 1 minute.
  3. Add the spinach and stir for 2-3 minutes until it wilts.
  4. Create the creamy sauce by stirring in the heavy cream and letting it simmer for about 3-4 minutes.
  5. Mix in the cooked gnocchi and feta, tossing gently to coat.
  6. Season with salt and pepper, then serve hot.

Notes

For a lighter option, consider substituting the heavy cream with half-and-half or coconut milk. Herbs or a pinch of red pepper flakes can also enhance the flavor!
