Creamy Basil Pesto Pasta Salad

A delightful pasta salad bursting with fresh basil, cherry tomatoes, and creamy mozzarella, perfect for summer gatherings.

  • 8 oz pasta (e.g., rotini or penne)
  • 1 cup fresh basil pesto
  • 1 cup fresh mozzarella balls
  • 1 cup cherry tomatoes, halved
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente, about 8-10 minutes.
  2. Prepare the creamy basil pesto by combining fresh basil pesto with olive oil in a mixing bowl and mixing well until smooth.
  3. Combine the cooked and drained pasta with the creamy basil pesto in a large mixing bowl.
  4. Add the halved cherry tomatoes and fresh mozzarella balls, gently folding them in.
  5. Season with salt and pepper as needed and add grated Parmesan cheese if using.
  6. Garnish with fresh basil leaves and serve immediately or chill for about 30 minutes for a refreshing taste.
