Cottage Cheese Egg Salad

A nostalgic twist on a classic egg salad with cottage cheese for added creaminess and protein.

Ingredients

  • 1 cup cottage cheese
  • 4 hard-boiled eggs
  • 2 tablespoons mayonnaise
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • Chopped chives or green onions (optional)

Instructions

  1. Boil the eggs. Place them in a saucepan, cover with water, and bring to a rolling boil. Once boiling, cover and remove from heat. Let them sit for 9-12 minutes.
  2. Prep the ingredients. In a mixing bowl, place the cottage cheese and blend or mash if desired.
  3. Chop the boiled eggs into chunks.
  4. Mix in the cottage cheese bowl the chopped eggs, mayonnaise, mustard, salt, and pepper until well combined.
  5. Add chives or green onions if using for freshness.
  6. Taste and adjust seasoning if needed.
  7. Chill the salad for about 30 minutes if desired before serving.

Notes

This salad can be served on bread, in lettuce cups, with crackers, or alongside veggie sticks.
