Cottage Cheese Chicken Parmesan Bowl

A delicious twist on classic Chicken Parmesan featuring creamy cottage cheese.

  • 23 Chicken Breasts
  • 1 cup Seasoned Bread Crumbs
  • 2 large Eggs
  • 1 ½ cups Cottage Cheese
  • 1 cup Shredded Mozzarella Cheese
  • ½ cup Parmesan Cheese, grated
  • 1 ½ cups Marinara Sauce
  • Fresh Basil or Parsley (for garnish)
  • 2 tablespoons Olive Oil

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish by lightly greasing it with olive oil.
  2. Pound the chicken breasts between two pieces of plastic wrap to an even thickness (about ½ inch).
  3. Set up your breading station: whisk the eggs in one bowl, and place the seasoned bread crumbs in another. Dip each chicken breast into the egg, letting the excess drip off, then cover it in bread crumbs.
  4. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the breaded chicken breasts and cook for about 3-4 minutes on each side until golden brown.
  5. Spread a thin layer of marinara sauce on the bottom of the greased baking dish. Lay the seared chicken breasts on top, then spoon cottage cheese over each piece.
  6. Add the remaining marinara sauce on top of the chicken, followed by mozzarella and parmesan cheese.
  7. Bake in the preheated oven for 25-30 minutes until the chicken is cooked through (internal temperature 165°F / 74°C) and the cheese is bubbly.
  8. Garnish with fresh basil or parsley before serving.

Notes

Great for a cozy family dinner; serve with pasta or garlic bread.
