  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin

  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Pita bread or wraps for serving

Instructions

  1. Combine the marinade: In a large mixing bowl, whisk together the olive oil, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, and pepper.
  2. Marinate the chicken: Add the chicken to the bowl, coating it generously. Let it sit for at least 30 minutes, preferably overnight.
  3. Preheat your grill or skillet: Get your grill hot or warm a skillet over medium-high heat.
  4. Cook the chicken: Place marinated chicken on the grill or skillet and cook for about 5-7 minutes on each side until done.
  5. Let it rest: Once cooked, remove chicken from heat and let rest for 5 minutes.
  6. Slice it up: Using a sharp knife, slice the chicken into thin strips.
  7. Prepare the garlic sauce: In a small bowl, combine more minced garlic, yogurt (or tahini for vegan), and lemon juice. Stir until smooth, seasoning with salt and pepper.
  8. Wrap it up: Prepare pita bread or wraps with filled chicken slices, tops with lettuce, tomatoes, and cucumbers, drizzled with garlic sauce.
  9. Dig in: Enjoy your shawarma, letting the flavors wash over you!
