Cheesy Muffin Tin Cottage Cheese Egg Bites

Delicious and protein-packed egg bites made with cottage cheese, eggs, and your choice of vegetables, perfect for breakfast or snacks.

  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chopped vegetables (e.g., bell peppers, spinach, onions)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your muffin tin by greasing it generously.
  3. Mix the 6 large eggs in a large bowl until frothy.
  4. Add the cottage cheese and mix well until combined.
  5. Fold in the shredded cheese and chopped vegetables, seasoning with salt and pepper.
  6. Pour the egg mixture into the muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes until puffed and golden.
  8. Cool in the tin for about 5 minutes before serving.

Notes

These bites are great for meal prep and freeze well for up to 3 months.
