Mouthwatering BBQ Chicken Nachos

  • 10 oz boneless skinless chicken breast
  • 1/2 cup barbecue sauce
  • 6 oz tortilla chips
  • 2 cups Monterey Jack cheese, shredded
  • 1/2 red onion, diced
  • 1 jalapeño, thinly sliced (optional)
  • 1 tomato, diced
  • 1/4 cup cilantro and/or green onions, chopped

Instructions

  1. Cook the Chicken: In a pot or pan over medium heat, cook the chicken breast until it’s no longer pink (about 15-20 minutes). Shred it and mix in the barbecue sauce.
  2. Prepare the Tortilla Base: Preheat your oven to 350°F (175°C) and spread the tortilla chips on a large baking sheet.
  3. Layer It Up: Sprinkle half of the cheese over the chips, add BBQ chicken, red onion, tomato, jalapeño, and top with remaining cheese.
  4. Bake to Perfection: Bake for about 10-15 minutes until cheese is melted.
  5. Garnish and Serve: Sprinkle chopped cilantro and green onions before serving.
