BBQ Chicken Nachos are a comforting and crowd-pleasing dish featuring crispy tortilla chips topped with shredded rotisserie chicken, tangy barbecue sauce, and gooey cheese.

  • 2 Rotisserie Chicken Breasts (Shredded)
  • 1/2 Cup BBQ Sauce
  • 1 11 oz. Bag of Tortilla Chips
  • 1 Cup Monterey Jack Cheese (Shredded)
  • 1 Red Onion (Diced)
  • Desired Toppings (jalapeños, sour cream, guacamole, green onions, fresh cilantro)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Shred your rotisserie chicken into bite-sized pieces and mix it with the BBQ sauce.
  3. Spread out the tortilla chips on a baking sheet in a single layer.
  4. Spoon the BBQ chicken mixture generously over the tortilla chips.
  5. Top with the shredded Monterey Jack cheese, spreading it evenly.
  6. Pop the nachos in the oven for about 10-15 minutes, until the cheese is melted and bubbly.
  7. Sprinkle the diced red onions and any other desired toppings.
  8. Serve with small bowls of sour cream and guacamole on the side.
