BBQ Chicken Grilled Cheese

A warm, gooey masterpiece that combines BBQ chicken and grilled cheese for a delightful twist on a classic favorite.

  • 1 cup shredded cooked chicken
  • 1/3 cup BBQ sauce
  • 4 slices bread (sourdough, brioche, or Texas toast)
  • 4 slices cheese (cheddar, smoked gouda, or mozzarella)
  • 2 tbsp unsalted butter or mayo (for spreading)
  • 2 tbsp caramelized onions (optional)
  • 12 slices crispy bacon (optional)
  • Pickled jalapeños or fresh herbs (parsley or cilantro)

Instructions

  1. Prep the Chicken and BBQ Sauce: In a bowl, mix the shredded chicken and BBQ sauce until well combined. Taste it and adjust the amount of sauce as desired.
  2. Caramelize the Onions (if using): Heat a small skillet over medium-low heat, add oil or butter, and toss in the sliced onions. Stir occasionally for about 15–20 minutes until golden.
  3. Assemble the Sandwiches: Lay out your bread slices, spread mayo or butter on one side, then layer the BBQ chicken mixture, caramelized onions, cheese, and bacon on two slices. Top with another slice of bread, buttered side up.
  4. Grill the Sandwiches: Preheat a skillet over medium heat and place the assembled sandwiches on it. Cook for about 3-4 minutes per side, pressing down gently.
  5. Slice and Serve: Once golden and crispy, remove the sandwiches from the pan and let them sit for a minute before slicing.
