Baked Feta Eggs with Tomatoes and Spinach

A comforting dish of baked eggs with creamy feta, cherry tomatoes, and fresh spinach, perfect for breakfast or brunch.

Ingredients

  • Feta Cheese
  • Eggs
  • Cherry Tomatoes
  • Fresh Spinach
  • Olive Oil
  • Salt
  • Pepper
  • Dried Oregano

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grab a baking dish and drizzle olive oil on the bottom.
  3. Spread the cherry tomatoes evenly across the bottom of your dish.
  4. Add the fresh spinach, distributing it well.
  5. Make little nests in the spinach and tomatoes for your eggs.
  6. Crack the eggs one by one into each nest.
  7. Crumble feta cheese generously over the top of the eggs.
  8. Drizzle with more olive oil and sprinkle with salt, pepper, and dried oregano.
  9. Slide the dish into the oven and bake for 20-25 minutes.
  10. Remove from the oven and let cool for a minute before serving.

Notes

Serve with crusty bread or pita for dipping. Great for breakfast or a light dinner!
