Avocado and Mango Summer Salad

A refreshing and vibrant salad combining creamy avocado and sweet mango, perfect for summer picnics and gatherings.

Ingredients

  • 2 ripe avocados, diced
  • 1 large mango, diced
  • 1 medium cucumber, chopped
  • 1/4 red onion, thinly sliced
  • 2 tbsp fresh lime juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by dicing avocados and mango into bite-sized pieces. Chop the cucumber and slice the red onion. Aim for speed without compromising joy!
  2. Mix the diced avocados, mango, cucumber, and red onion gently in a large bowl.
  3. Dress the salad by whisking lime juice and olive oil in a small bowl. Add salt and pepper to taste.
  4. Combine the dressing with the salad mixture and toss gently.
  5. Taste and adjust seasoning as needed.
  6. Chill the salad in the fridge for 15-30 minutes before serving, if time allows.

Notes

Serve in a colorful bowl and consider garnishing with fresh herbs and lime wedges. This salad can also be added to wraps or served over grilled meats.
