Alabama BBQ Chicken Chopped Sandwich

A delicious sandwich featuring crispy fried chicken tenders, zesty pickles, and a tangy dressing, all nestled in a soft hoagie roll.

  • 68 crispy fried chicken tenders
  • 3 cups chopped romaine lettuce
  • 1/2 cup dill pickles (plus a few splashes of brine)
  • 1/4 cup red onion (sliced)
  • 4 hoagie rolls
  • 4 tablespoons butter
  • 1 ¼ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons brown sugar
  • 2 teaspoons creamy horseradish
  • 2 teaspoons lemon juice (fresh squeezed)
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons hot sauce
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Prepare your chicken tenders: If you’re making your own, season your chicken tenders with salt, pepper, and a sprinkle of garlic powder. Dredge them in flour, dip in beaten eggs, then coat with breadcrumbs. Heat oil in a skillet over medium heat and fry until golden brown and crispy, about 4-5 minutes on each side.
  2. Toast the hoagie rolls: In a small pan, melt the butter over medium heat. Slice your hoagie rolls in half and toast the insides until golden brown.
  3. Mix up the dressing: In a bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, brown sugar, creamy horseradish, lemon juice, Worcestershire sauce, hot sauce, cayenne pepper, garlic powder, onion powder, and a pinch of salt and pepper.
  4. Chop the chicken: Once your tenders are cooled slightly, chop them into bite-sized pieces. Toss them in a bowl with a few splashes of pickle brine.
  5. Assemble your sandwich: Start with a soft hoagie roll. Load in the chopped romaine lettuce, followed by a generous helping of the chopped chicken. Add a layer of sliced red onions and the dill pickles.
  6. Top it off: Place the other half of the hoagie roll on top, give it a gentle press, and enjoy!

Notes

For added flavor, feel free to experiment with different spices in the dressing. This recipe also works well as a vegetarian option using fried chickpeas.
